Take:

4-5 potatoes

600 g of pumpkin

500 g of chicken fillet

1 egg

100 g of fine-ground barley

1 onion

sour cream – to taste

Preparation:

  1. Rinse chicken fillet thoroughly, dry it and grind it with a meat grinder (or you can grind meat in a blender until it will be very fine with smooth texture).
  2. Remove the peel from the pumpkin, peel the onion, let the vegetables through the meat grinder, then mix them thoroughly with the minced meat.
  3. Add the barley and egg to the stuffing, salt to taste. Leave for 10-15 minutes (to swell the cereals).
  4. Form meatballs, put them in a frying pan or in a baking dish. Pour a little water on the bottom, grease each meatball with sour cream.
  5. Preheat oven to 180 ° C, bake meatballs for 25-30 minutes. The dish is best served with mashed potatoes and a vegetables salad.

 

RICE PUDDING WITH PUMPKIN

Take:

1 cup of rice (better round)

2 eggs

800 g of peeled pumpkin

1 liter of milk

1-2 tablespoons of honey

salt, sugar, cinnamon – to taste

7 tablespoons of flour

Preparation:

  1. Peel the pumpkin, wash and cut into cubes.
  2. Fold in a saucepan, pour milk on 3/4, add honey, cinnamon and simmer for 30 minutes (until it becomes soft). If a milk is not enough, add more.
  3. At the same time, boil a rice in milk due to its higher viscosity. Cook until soft, for about 20 – 25 minutes over low heat.
  4. Separate the yolks from the proteins.
  5. Rinse the yolks with sugar, mix with rice and pumpkin, add flour, if you have flour that is not self-raising, then add baking powder. You can add sugar, but my pumpkin was so sweet plus honey, so I did not add. Mix everything. Whip the whites into a foam and gently mix it with the dough.
  6. Butter and line the cake pan (you can bake in a round shape with a diameter of 26 cm), sprinkle with flour, lay out the dough. Bake in the oven at 180 ° C for about 35-40 minutes.
  7. If desired, sprinkle with powdered sugar.

Take:

1 kg of pumpkin

3 eggs

0.5 cups of flour

salt – to taste
