Broccoli puree with egg

Do You Like Broccoli? 

High in vitamin A, vitamin C and vitamin K, including iron and potassium, fibre-filled broccoli is both healthy and filling. This delicious dish combines broccoli and eggs.


  • Broccoli 1 head
  • Water 1 l
  • Olive oil 3 tbsp
  • Salt, pepper to taste
  • Egg of chicken 4 pcs
  • Pistachio 2 tbsp


Cooking method:

Step 1:

Divide broccoli into inflorescences and boiled in boiling salted water for 20 minutes. At this time, boil the poached eggs.

Step 2:

Discard broccoli in a colander, leaving some water in which it was cooked.

Step 3:

Grind broccoli in a blender, gradually adding water, until a smooth smoothie is obtained. Add the olive oil, add salt, pepper and mix thoroughly.

Step 4:

Serve the mashed potatoes by laying the egg poached on top and sprinkling a little chopped pistachios.

Can be served as an independent dish, or as a garnish.
